  • 4 large egg yolks
  • 2 1/2 cups heavy whipping cream
  • 2/3 cup light brown sugar
  • 1/3 cup cornstarch
  • 1/2 tsp salt
  • 1/2 cup honey
  • 2 tsp vanilla extract
  • Flaky sea salt (for topping)

Instructions

  1. Prepare the pie crust in an 8-inch or 9-inch pie pan and chill it in the refrigerator.
  2. In a medium saucepan, combine heavy cream, brown sugar, cornstarch, and salt. Heat over medium heat, stirring constantly until it reaches a rolling boil.
  3. Remove from heat and slowly ladle some hot cream mixture into the bowl with lightly beaten egg yolks while whisking continuously to temper them.
  4. Pour the tempered egg yolk mixture back into the saucepan with the remaining cream. Stir well, then add honey and vanilla extract.
  5. Pour the custard mixture into the chilled pie crust and spread evenly.
  6. Bake at 375°F (190°C) for 40-45 minutes until bubbling and golden on top. Let cool at room temperature before refrigerating until firm.
  7. Sprinkle flaky sea salt on top before serving.
