  • 4 cups chopped baby gold potatoes
  • 1 teaspoon dried parsley
  • 1 teaspoon dried basil
  • 4 cups chicken stock
  • 6 tablespoons flour
  • 3 cups milk
  • 1/2 cup heavy cream
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 2 cups freshly shredded extra-sharp Cheddar cheese
  • 1/4 cup sour cream
  • Hearty buttered bread (for serving, optional)

Instructions

  1. In a large pot over medium-high heat, cook the Italian sausage until browned. Set aside.
  2. In the same pot, melt one tablespoon of butter and sauté mirepoix until softened. Add garlic and cook for another 30 seconds.
  3. Stir in chopped potatoes, seasonings, and chicken stock; bring to a boil then reduce heat to simmer until potatoes are fork-tender.
  4. In a separate medium pot, melt remaining butter and whisk in flour; gradually add milk and heavy cream until thickened.
  5. Combine the creamy mixture with the soup; stir in shredded cheese and return the cooked sausage.
  6. Taste and adjust seasoning before serving warm.
