  • 32 oz frozen whole kernel corn (thawed)
  • 1.5 cups half and half
  • 3 large eggs
  • 2 tablespoons granulated sugar
  • 0.5 teaspoon salt
  • 0.125 teaspoon ground nutmeg
  • 1.5 cups sharp white cheddar or pepper-jack cheese (divided)
  • 1 sleeve round butter crackers (crushed)

Instructions

  1. Preheat the oven to 325°F and butter a 13×9-inch baking dish.
  2. In a medium bowl, whisk together the half and half, eggs, sugar, salt, and nutmeg until smooth.
  3. In a large bowl, combine the thawed corn with the egg mixture, 3/4 cup of cheese, and 1/2 cup of crushed crackers; mix well.
  4. Pour the corn mixture into the prepared baking dish.
  5. Bake for about 30 minutes until set.
  6. While baking, melt 4 tablespoons of butter in a small bowl; toss with remaining cracker crumbs.
  7. After 30 minutes, sprinkle reserved cheese and buttered cracker crumbs on top; return to the oven for another 20–30 minutes until golden brown.
