  • 12 ounces lump crab meat
  • 1/4 cup quality dry sherry
  • 1 teaspoon Old Bay seasoning
  • 1/2 teaspoon white pepper
  • Salt to taste
  • Fresh chives, minced
  • Fresh tarragon, chopped
  • Crème fraîche (optional)
  • Extra shrimp for garnish

Instructions

  1. Melt the butter in a large Dutch oven over medium heat. Add onion and celery; cook until softened (about 5 minutes).
  2. Stir in garlic and cook until fragrant (about 1 minute).
  3. Sprinkle flour over vegetables; cook while stirring constantly for about 2 minutes.
  4. Gradually whisk in warmed milk and seafood stock until smooth.
  5. Add tomato paste, bay leaves, and Old Bay seasoning; simmer for about 5 minutes.
  6. Stir in heavy cream and let simmer for another 5 minutes.
  7. Add shrimp to the pot; cook until pink (3–4 minutes).
  8. Fold in crab meat and dry sherry; heat through for an additional 2 minutes.
  9. Remove bay leaves and adjust seasonings before serving.
