Ingredients
- 1 lb large dry-packed sea scallops
- Salt and pepper
- Olive oil
- Unsalted butter
- Heavy cream
- Garlic
- Cajun seasoning
- Smoked paprika
- Parmesan cheese
- Lemon juice
Instructions
- Pat scallops dry with paper towels and season both sides with salt and pepper.
- Heat olive oil and 1 tbsp butter in a cast iron skillet over medium-high heat. Sear scallops for 2–3 minutes until golden brown; flip and cook for another 1–2 minutes. Remove from skillet.
- In the same skillet, reduce heat to medium. Add remaining butter and minced garlic; sauté until fragrant. Deglaze pan with white wine or seafood broth.
- Stir in heavy cream, Cajun seasoning, smoked paprika, and cayenne (if using). Simmer until thickened.
- Mix in Parmesan cheese and lemon juice; return scallops to the pan to warm through. Garnish with parsley before serving.
