  • 1 lb raw shrimp (medium or large), peeled and deveined
  • 8 white corn tortillas (6-inch diameter)
  • 1/2 small purple cabbage, shredded
  • 1 large avocado, diced
  • 1/2 red onion, diced
  • 4 oz Cotija cheese, grated
  • 1 lime, cut into wedges
  • 1/3 cup sour cream
  • 1/3 cup mayonnaise
  • 1 ½ tablespoons lime juice
  • ¾ teaspoon garlic powder
  • ¾ teaspoon Sriracha sauce

Instructions

  1. Thaw and pat dry the shrimp. In a medium bowl, mix with minced garlic, sea salt, black pepper, ground cumin, and cayenne pepper.
  2. Heat olive oil in a non-stick pan over medium-high heat. Cook the seasoned shrimp for 1-2 minutes on each side until they are pink and opaque.
  3. Toast corn tortillas over a flame or skillet until lightly charred.
  4. Prepare toppings: shred cabbage, dice avocado and onion, chop cilantro.
  5. Make the sauce by whisking together sour cream, mayo, lime juice, garlic powder, and Sriracha in a small bowl.
