- 2 packs udon noodles
- 200 g fresh beef, thinly sliced
- 1 white onion, sliced
- Chinese cabbage (or any leafy green)
- 1 tbsp minced garlic
- 1 clove garlic, minced
- Salt to taste
- Sugar to taste
- 1 tsp sesame oil
- 1 tbsp soy sauce
- 1 tsp oyster sauce
- 1 tsp corn starch or potato starch + water (for slurry)
- 1 tsp Chinese white rice vinegar
- 3 tbsp dark soy sauce
- 2 tsp fresh ground black pepper
- 3 tbsp water
- 1/2 tsp potato starch
Instructions
- Marinate the beef in a mixture of garlic, sesame oil, soy sauce, oyster sauce, vinegar, and cornstarch slurry for 10 minutes.
- Boil udon noodles for 1-2 minutes until slightly loose; drain and set aside.
- Mix dark soy sauce, oyster sauce, black pepper, water, and potato starch to make the black pepper sauce.
- Stir-fry garlic and onions in a wok until soft; add marinated beef and cook until browned. Stir in the black pepper sauce until thickened.
- Combine cooked udon noodles and cabbage into the wok; toss to coat evenly.
