Ingredients
- 1 lb ground beef
- 1 small onion (diced)
- 2 cloves garlic (minced)
- 1 oz taco seasoning mix
- 14.5 oz diced tomatoes with green chilies
- 15 oz black beans (drained and rinsed)
- 15 oz corn (drained)
- 1 cup salsa
- 1 cup shredded Mexican cheese blend
- Tortilla strips
Instructions
- In a large skillet over medium-high heat, brown the ground beef; drain excess fat.
- Sauté diced onion in the skillet until softened, then add minced garlic and cook until fragrant.
- Stir in taco seasoning and diced tomatoes; remove from heat.
- Spray the slow cooker with non-stick spray and layer as follows: salsa, tortilla strips, half of beef mixture, black beans, corn, repeat layers finishing with tortilla strips and remaining salsa on top.
- Cover and cook on low for 4-5 hours or high for 2-3 hours.
- About 15 minutes before serving, sprinkle cheese on top and cover to melt.
