  • 2 1/2 lbs baby creamer potatoes (halved)
  • 1 1/2 lbs beef smoked sausage (sliced into 1-inch pieces)
  • 1 large yellow onion (diced)
  • 1 green bell pepper (diced)
  • 2 Tbsp olive oil
  • Slap Ya Mama seasoning
  • 1 tsp garlic powder
  • 1 tsp black pepper
  • 1 tsp red pepper flakes
  • 4 Tbsp butter (cubed)

Instructions

  1. Preheat your oven to 350°F and grease a 9×13 baking dish.
  2. In a mixing bowl, coat halved potatoes with olive oil and seasonings.
  3. Add sliced sausage, onion, and bell pepper; toss until evenly combined.
  4. Transfer the mixture to the baking dish and dot with cubed butter.
  5. Cover with aluminum foil and bake for 30 minutes. Remove foil and bake for an additional 15-20 minutes until potatoes are fork-tender.
  6. Allow to rest for 5 minutes before serving.
