Ingredients

  • 2 boxes manicotti shells (8 ounces each)
  • 1.5 pounds ground beef
  • 1 pound hot Italian sausage
  • 2 cups sharp cheddar cheese
  • 6 ounces cream cheese
  • 1 medium onion, finely diced
  • 1 jalapeno, finely diced
  • 2 teaspoons Slap Ya Mama seasoning
  • 2 teaspoons garlic powder
  • 2 teaspoons black pepper
  • 1 teaspoon red pepper flakes
  • ⅓ cup barbecue sauce
  • 2 packages bacon (16 ounces each)
  • Additional barbecue sauce for coating

Instructions

  1. Preheat your smoker to 250°F.
  2. In a mixing bowl, combine ground beef, sausage, cheeses, onion, jalapeno, and seasonings.
  3. Stuff each manicotti shell with the meat mixture from both ends.
  4. Wrap each shell with bacon; use two pieces if necessary for full coverage.
  5. Brush barbecue sauce on both sides of the shells.
  6. Place on a baking sheet and smoke for 60 minutes; flip and baste with more sauce before smoking for another hour until crispy.
