Ingredients
- 2 boxes manicotti shells (8 ounces each)
- 1.5 pounds ground beef
- 1 pound hot Italian sausage
- 2 cups sharp cheddar cheese
- 6 ounces cream cheese
- 1 medium onion, finely diced
- 1 jalapeno, finely diced
- 2 teaspoons Slap Ya Mama seasoning
- 2 teaspoons garlic powder
- 2 teaspoons black pepper
- 1 teaspoon red pepper flakes
- ⅓ cup barbecue sauce
- 2 packages bacon (16 ounces each)
- Additional barbecue sauce for coating
Instructions
- Preheat your smoker to 250°F.
- In a mixing bowl, combine ground beef, sausage, cheeses, onion, jalapeno, and seasonings.
- Stuff each manicotti shell with the meat mixture from both ends.
- Wrap each shell with bacon; use two pieces if necessary for full coverage.
- Brush barbecue sauce on both sides of the shells.
- Place on a baking sheet and smoke for 60 minutes; flip and baste with more sauce before smoking for another hour until crispy.
