  • 12 full-size graham crackers
  • 2 tablespoons granulated sugar
  • 6 tablespoons unsalted butter (melted)
  • ½ cup vegetable oil
  • 1 cup sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • ½ cup unsweetened cocoa powder
  • ½ cup all-purpose flour
  • ½ teaspoon salt
  • ¼ teaspoon baking powder
  • ½ cup bittersweet chocolate chips
  • 2 heaping cups mini marshmallows

Instructions

  1. Preheat the oven to 350°F. Prepare an 8×8 inch baking pan.
  2. Blend graham crackers and sugar in a food processor until fine. Mix in melted butter and press into the bottom of the pan.
  3. Bake the crust for 15–20 minutes until golden brown.
  4. In a bowl, whisk together oil, sugar, eggs, and vanilla. Add cocoa powder, flour, salt, and baking powder; mix until combined.
  5. Pour brownie batter over the crust and bake for 30–40 minutes.
  6. Broil mini marshmallows on top for about 2 minutes until golden.
  7. Let cool for at least 30 minutes before slicing.
