  • 1 large egg yolk (room temperature)
  • 2 teaspoons vanilla extract
  • 1 tablespoon maple syrup
  • ¼ cup pumpkin puree
  • 1 teaspoon pumpkin pie spice
  • 1 ½ teaspoons ground cinnamon
  • 2 cups all purpose flour
  • ½ teaspoon baking soda
  • ½ teaspoon baking powder
  • ½ teaspoon kosher salt
  • ½ cup white sugar
  • ½ tablespoon pumpkin pie spice

Instructions

  1. Melt unsalted butter in a saucepan until browned; cool.
  2. In a bowl, whisk together sugars and maple syrup with cooled butter.
  3. Add egg yolk, vanilla extract, and pumpkin puree; mix until smooth.
  4. In another bowl, combine flour, baking soda, baking powder, salt, pumpkin pie spice, and cinnamon.
  5. Fold dry ingredients into wet mixture until a dough forms; chill in the fridge for 30 minutes.
  6. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  7. Scoop dough into balls; roll in a mixture of sugar and pumpkin pie spice.
  8. Bake for 10–14 minutes until edges are firm but centers remain slightly underbaked.
