  • ¼ cup non-dairy or regular dairy milk (warmed to 110℉)
  • 1 ½ teaspoons instant yeast
  • 2 teaspoons granulated sugar
  • 2 cups + 1 Tablespoon all-purpose flour
  • 200 grams sourdough discard (unfed, at room temperature)
  • 1 egg (lightly beaten)
  • Fresh parsley or rosemary (chopped)
  • 2 Tablespoons melted unsalted butter
  • Flaky sea salt for topping

Instructions

  1. In a stand mixer bowl, combine warmed milk, yeast, and sugar. Add flour, sourdough discard, beaten egg, herbs, salt, garlic powder, and melted butter. Mix on low speed until a shaggy dough forms.
  2. Knead on a floured surface for 3–4 minutes until smooth and slightly tacky.
  3. Place dough in a greased bowl; cover and let rise for 60–90 minutes until doubled.
  4. While rising, mix softened butter with herbs and garlic powder for the topping.
  5. After rising, divide dough into 12 pieces and shape them; fill with the reserved butter mixture before placing in a greased loaf pan.
  6. Let rise again for about 30–45 minutes before preheating the oven to 350℉.
  7. Bake for about 30 minutes; cover with foil and bake an additional 5–10 minutes until golden brown.
