  • 1 can black beans
  • 1 batch cilantro lime rice
  • 1 red pepper
  • 1 orange pepper
  • 1 avocado
  • Spicy tahini dressing
  • Sriracha

Instructions

  1. Preheat oven to 400°F.
  2. Press tofu between towels with a weight for 5-10 minutes to remove moisture.
  3. Mix sriracha, olive oil, and spices in a bowl.
  4. Cube the pressed tofu and toss it with half the marinade.
  5. Coat tofu with seasoning mix and spread on a lined baking sheet.
  6. Add chopped peppers drizzled with olive oil on the same sheet.
  7. Bake for 20 minutes; brush remaining marinade on tofu and bake for another 10-15 minutes until crispy.
  8. Assemble bowls with cilantro lime rice, black beans, roasted peppers, tofu, and avocado.
