Ingredients
- 12–15 jumbo pasta shells
- 2 cups ricotta cheese
- 1 cup shredded mozzarella cheese (divided)
- 1/2 cup grated Parmesan cheese
- 1 large egg
- 2 cups fresh spinach (or 1 cup frozen spinach)
- 2 cloves garlic (minced)
- 2 cups marinara sauce
- Olive oil, Italian seasoning, salt, and pepper
Instructions
- Preheat the oven to 375°F (190°C).
- Cook the jumbo pasta shells in boiling salted water until al dente (8-10 minutes). Drain and set aside.
- In a mixing bowl, combine ricotta cheese, half of the mozzarella cheese, Parmesan cheese, egg, chopped spinach, minced garlic, Italian seasoning, salt, and pepper. Mix well.
- Fill each cooled pasta shell with the ricotta mixture and place them in a baking dish lined with marinara sauce.
- Pour remaining marinara sauce over the stuffed shells and sprinkle with remaining mozzarella cheese.
- Drizzle olive oil on top if desired. Cover with foil and bake for 20 minutes; then remove foil and bake an additional 10 minutes until bubbly.
