  • 1215 jumbo pasta shells
  • 2 cups ricotta cheese
  • 1 cup shredded mozzarella cheese (divided)
  • 1/2 cup grated Parmesan cheese
  • 1 large egg
  • 2 cups fresh spinach (or 1 cup frozen spinach)
  • 2 cloves garlic (minced)
  • 2 cups marinara sauce
  • Olive oil, Italian seasoning, salt, and pepper

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cook the jumbo pasta shells in boiling salted water until al dente (8-10 minutes). Drain and set aside.
  3. In a mixing bowl, combine ricotta cheese, half of the mozzarella cheese, Parmesan cheese, egg, chopped spinach, minced garlic, Italian seasoning, salt, and pepper. Mix well.
  4. Fill each cooled pasta shell with the ricotta mixture and place them in a baking dish lined with marinara sauce.
  5. Pour remaining marinara sauce over the stuffed shells and sprinkle with remaining mozzarella cheese.
  6. Drizzle olive oil on top if desired. Cover with foil and bake for 20 minutes; then remove foil and bake an additional 10 minutes until bubbly.
