- 2 tbsp granulated sugar
- 2 tsp milk
- 1 tsp flour
- 1/2 tsp vanilla extract
- 1 tsp butter
- 2 tbsp pumpkin seeds
- 1/2 tbsp brown sugar
Instructions
- Preheat your oven to 350°F (175°C) and grease or line a muffin tin.
- In one bowl, whisk together flour, baking soda, spices, and sugar. In another bowl, mix together canola oil, pumpkin, eggs, and vanilla.
- Combine wet and dry ingredients gently until just mixed.
- Prepare the cream cheese filling by blending cream cheese with sugar, milk, flour, and vanilla until smooth.
- Fill each muffin cup halfway with batter, add a dollop of cream cheese filling, then top with more batter to cover.
- Sprinkle with pumpkin seeds and brown sugar before baking for about 20 minutes or until a toothpick comes out clean.
- Cool briefly before transferring to a wire rack.
