  • 2 tbsp granulated sugar
  • 2 tsp milk
  • 1 tsp flour
  • 1/2 tsp vanilla extract
  • 1 tsp butter
  • 2 tbsp pumpkin seeds
  • 1/2 tbsp brown sugar

Instructions

  1. Preheat your oven to 350°F (175°C) and grease or line a muffin tin.
  2. In one bowl, whisk together flour, baking soda, spices, and sugar. In another bowl, mix together canola oil, pumpkin, eggs, and vanilla.
  3. Combine wet and dry ingredients gently until just mixed.
  4. Prepare the cream cheese filling by blending cream cheese with sugar, milk, flour, and vanilla until smooth.
  5. Fill each muffin cup halfway with batter, add a dollop of cream cheese filling, then top with more batter to cover.
  6. Sprinkle with pumpkin seeds and brown sugar before baking for about 20 minutes or until a toothpick comes out clean.
  7. Cool briefly before transferring to a wire rack.
