- 1 lb vanilla cream cookies
- 6 tablespoons butter
- 1 small box strawberry gelatin
- 1 cup boiling water
- 2 bricks (16 oz) cream cheese, softened
- 3/4 cup granulated sugar
- 2 cups heavy whipping cream
- 1/2 cup powdered sugar
- 10 strawberry wafer cookies
- whipped topping
Instructions
- Make the crust by processing cookies into crumbs, mixing with melted butter, and pressing into a springform pan. Freeze for 15 minutes.
- Dissolve gelatin in boiling water and let cool. Beat cream cheese with granulated sugar until smooth.
- Whip heavy cream with powdered sugar until stiff peaks form, then fold in half with the gelatin mixture and half into the cream cheese mix.
