  • 1 lb vanilla cream cookies
  • 6 tablespoons butter
  • 1 small box strawberry gelatin
  • 1 cup boiling water
  • 2 bricks (16 oz) cream cheese, softened
  • 3/4 cup granulated sugar
  • 2 cups heavy whipping cream
  • 1/2 cup powdered sugar
  • 10 strawberry wafer cookies
  • whipped topping

Instructions

  1. Make the crust by processing cookies into crumbs, mixing with melted butter, and pressing into a springform pan. Freeze for 15 minutes.
  2. Dissolve gelatin in boiling water and let cool. Beat cream cheese with granulated sugar until smooth.
  3. Whip heavy cream with powdered sugar until stiff peaks form, then fold in half with the gelatin mixture and half into the cream cheese mix.
  4. Layer the strawberry mixture over the crust, freeze for another 15 minutes, then add the cream cheese layer followed by the remaining strawberry mixture.
  5. Crush additional cookies for topping and sprinkle over the cheesecake before chilling it in the fridge for at least 4 hours.
