Description

  • 1 teaspoon vanilla extract
  • 1/4 cup all-purpose flour (for streusel)
  • 2 tablespoons butter (for streusel)
  • 1/8 cup lightly packed brown sugar (for streusel)

Instructions

  1. Preheat your oven to 400°F (200°C) and line a muffin tin with cupcake liners.
  2. In a medium bowl, prepare the streusel crumb topping by mixing together flour, butter, and brown sugar until crumbly.
  3. In another bowl, whisk together the dry ingredients: flour, sugar, baking powder, and salt.
  4. In a separate bowl, mix the wet ingredients: eggs, milk, vegetable oil, and vanilla extract. Gently fold in sliced strawberries.
  5. Combine the wet and dry mixtures until just combined; avoid overmixing.
  6. Fill each muffin mold about two-thirds full and sprinkle streusel topping on each.
  7. Bake for 15–17 minutes or until muffins spring back when pressed gently.
