Instructions
- Preheat your oven to 400°F (200°C) and line a muffin tin with cupcake liners.

- In another bowl, whisk together the dry ingredients: flour, sugar, baking powder, and salt.
- In a separate bowl, mix the wet ingredients: eggs, milk, vegetable oil, and vanilla extract. Gently fold in sliced strawberries.
- Combine the wet and dry mixtures until just combined; avoid overmixing.
- Fill each muffin mold about two-thirds full and sprinkle streusel topping on each.
- Bake for 15–17 minutes or until muffins spring back when pressed gently.
