  • 22.5 lbs. salmon
  • Salt and pepper (to taste)
  • 2 cans (8 oz each) pineapple slices (drained, reserve juice)
  • 1/2 cup sweet chili sauce
  • 2 tablespoons rice vinegar
  • 1 tablespoon soy sauce
  • 1 tablespoon brown sugar
  • 1/4 cup pineapple juice
  • Chopped fresh cilantro (for garnish)

Instructions

  1. Preheat oven to 425°F. Line a baking sheet with aluminum foil and spray with cooking spray.
  2. Place the salmon on the baking sheet, season with salt and pepper, and arrange drained pineapple slices around it.
  3. In a small bowl, whisk together sweet chili sauce, rice vinegar, soy sauce, brown sugar, and reserved pineapple juice. Pour the glaze over the salmon.
  4. Bake for 12-15 minutes, then switch to broil for an additional 4-5 minutes until edges are slightly blackened.
  5. Garnish with chopped cilantro before serving.
