- 2 tbsp olive oil

- 2 medium red or yellow bell peppers

- 1½ tsp light brown sugar
- 1 tsp dried oregano
- 1 tsp balsamic vinegar
- 8 oz dry short-cut pasta (rigatoni, penne, or fusilli)
- Kosher salt to taste
Instructions

- Cook the pasta according to package instructions; reserve half a cup of pasta water before draining.
- Mix the drained pasta and cooked sausage into the skillet with vegetables; stir in reserved pasta water to achieve desired consistency.
