- 3 – 4 medium sweet potatoes
- 1¾ cups all-purpose flour
- 2 teaspoons baking powder
- ¼ teaspoon baking soda
- 2 teaspoons ground cinnamon
- 1 teaspoon ground nutmeg
- ½ teaspoon salt
- ½ cup canola oil or melted butter
- ½ cup light brown sugar
- ¼ cup granulated sugar
- 2 large eggs
- ½ cup sour cream
- ½ cup chopped pecans
- 1/3 cup light brown sugar for streusel
- 1 teaspoon ground cinnamon for streusel
- ¼ teaspoon salt for streusel
- 3 tablespoons melted butter for streusel
Instructions
- Preheat oven to 425°F (218°C) and roast pierced sweet potatoes for 40-45 minutes until fork-tender.
- Cool and puree sweet potato until smooth.
- Whisk together flour, baking powder, baking soda, cinnamon, nutmeg, and salt in one bowl; mix oil, sugars, eggs, sour cream, and pureed sweet potato in another.
- Combine wet and dry ingredients without overmixing; let rest for 30 minutes.
