  • 1 lb ground beef
  • 1 packet taco seasoning
  • 3/4 cup water
  • 2 cups salsa
  • 4 large flour tortillas
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 2 cups shredded cheddar cheese
  • 2 cups shredded Monterey Jack cheese

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large skillet, brown the ground beef over medium heat. Drain excess fat.
  3. Stir in taco seasoning and water; simmer for 5 minutes until thickened.
  4. Mix in salsa; cook for an additional 2 minutes.
  5. In a bowl, combine black beans and corn.
  6. In a greased 9×13 inch baking dish, layer as follows: spread beef mixture, place a tortilla, add black bean-corn mixture, and sprinkle with cheese. Repeat until ingredients are used up, finishing with cheese on top.
  7. Cover with foil and bake for 25-30 minutes; uncover and bake an additional 10 minutes until bubbly.
