  • 1 tablespoon sesame oil
  • ¼ cup onion (diced)
  • 2 cloves garlic
  • 1 tablespoon fresh minced ginger
  • 10 oz ground chicken
  • ¼ cup Tamari (or soy sauce)
  • 2 tablespoons Thai sweet red chili sauce
  • Juice of 1 lime
  • ⅓ cup cashews (chopped)
  • 1 head butter lettuce (leaves removed)

Instructions

  1. Heat sesame oil in a skillet over medium-high heat. Add diced onion and sauté until translucent (2-3 minutes). Stir in garlic and ginger; cook for another 2 minutes.
  2. Add ground chicken to the skillet, breaking it up with a spoon. Season with salt and pepper, cooking until golden brown (3-4 minutes).
  3. In a bowl, mix together tamari, chili sauce, lime juice, and maple syrup. Pour over the cooked chicken along with chopped cashews. Toss well and cook on low for an additional 2 minutes.
  4. Remove from heat and stir in shredded carrots, scallions, and cilantro.
  5. To assemble, place a generous spoonful of the chicken mixture into each butter lettuce leaf. Top with sesame seeds if desired.
