  • ¼ cup creamy peanut butter
  • ¼ cup soy sauce
  • 2 tablespoons rice vinegar
  • 2 tablespoons honey
  • 1 tablespoon sriracha (adjust to taste)
  • ½ cup coconut milk (or regular milk)
  • 1 tablespoon lime juice
  • 1 teaspoon sesame oil
  • Garnish: chopped peanuts and fresh cilantro

Instructions

  1. Pat the chicken dry and cut into bite-sized pieces.
  2. Heat vegetable oil in a non-stick skillet over medium heat. Cook chicken until browned and cooked through, about 5-7 minutes.
  3. In a bowl, combine garlic, ginger, peanut butter, soy sauce, rice vinegar, honey, sriracha, coconut milk, lime juice, and sesame oil until smooth.
