Ingredients

  • 2 cans (5 oz each) tuna, drained
  • 1 medium onion, chopped
  • 1/2 stalk celery, chopped
  • 1 clove garlic, minced
  • 1 tablespoon parsley, chopped
  • 34 tablespoons mayonnaise
  • 3 tablespoons extra virgin olive oil
  • 1/3 cup shredded mozzarella cheese
  • Sliced bread
  • Softened butter
  • Salt and pepper to taste

Instructions

  1. In a medium bowl, mix drained tuna with onion, celery, garlic, parsley, mayonnaise, olive oil, mozzarella cheese, salt, and pepper.
  2. Heat a non-stick skillet over medium heat and add a tablespoon of olive oil. Butter one side of a slice of bread and place it in the skillet.
  3. Spoon about 2 tablespoons of the tuna mixture onto the bread while it cooks.
  4. Butter another slice of bread on one side and place it butter-side-up on top of the filling.
  5. Grill until golden brown; flip carefully to toast the other side until browned.
