- 113 g unsalted butter
- 200 g dark chocolate
- 100 g brown sugar
- 50 g granulated sugar
- 3 eggs
- 90 g all-purpose flour (sifted)
- A pinch of salt
- 1/2 tsp vanilla extract
- 2 shots espresso or instant coffee
- 250 g mascarpone cheese (room temperature)
- 240 ml heavy cream
- 50 g sugar
- 1/4 tsp salt
- 1/2 tsp vanilla extract
- 2 tbsp espresso powder
- Cocoa powder for dusting
Instructions
- Preheat your oven to 350°F (175°C). Line an 8 or 9-inch square baking tin with parchment paper.
- In a microwave-safe bowl, melt the dark chocolate and unsalted butter together in intervals, stirring until smooth.
- Mix in both sugars until well combined.
- Add eggs one at a time, whisking each until fully incorporated.
- Sift in flour and salt, gently fold until just combined.
- Pour the batter into the prepared tin and bake for 25–30 minutes or until set.
- Once baked, poke holes into the brownies and pour espresso over while warm; allow to cool completely.
- For the topping, mix mascarpone cheese, heavy cream, sugar, salt, vanilla extract, and espresso powder until smooth. Spread over cooled brownies and dust with cocoa before serving.
