  • 113 g unsalted butter
  • 200 g dark chocolate
  • 100 g brown sugar
  • 50 g granulated sugar
  • 3 eggs
  • 90 g all-purpose flour (sifted)
  • A pinch of salt
  • 1/2 tsp vanilla extract
  • 2 shots espresso or instant coffee
  • 250 g mascarpone cheese (room temperature)
  • 240 ml heavy cream
  • 50 g sugar
  • 1/4 tsp salt
  • 1/2 tsp vanilla extract
  • 2 tbsp espresso powder
  • Cocoa powder for dusting

Instructions

  1. Preheat your oven to 350°F (175°C). Line an 8 or 9-inch square baking tin with parchment paper.
  2. In a microwave-safe bowl, melt the dark chocolate and unsalted butter together in intervals, stirring until smooth.
  3. Mix in both sugars until well combined.
  4. Add eggs one at a time, whisking each until fully incorporated.
  5. Sift in flour and salt, gently fold until just combined.
  6. Pour the batter into the prepared tin and bake for 25–30 minutes or until set.
  7. Once baked, poke holes into the brownies and pour espresso over while warm; allow to cool completely.
  8. For the topping, mix mascarpone cheese, heavy cream, sugar, salt, vanilla extract, and espresso powder until smooth. Spread over cooled brownies and dust with cocoa before serving.
