  • 14 oz shredded sweetened coconut
  • 2 boxes (3.4 oz each) instant coconut pudding
  • 2 cups whole milk
  • 14 oz can sweetened condensed milk
  • 1.5 cups heavy whipping cream
  • 1/3 cup powdered sugar
  • 2 teaspoons vanilla extract
  • 11 oz box vanilla wafers

Instructions

  1. Preheat oven to 425°F. Spread shredded coconut on a parchment-lined baking sheet.
  2. Toast the coconut in the oven for about 6–7 minutes, stirring halfway until golden brown.
  3. In a large bowl, whisk together instant pudding mix, whole milk, and sweetened condensed milk until smooth. Let thicken for 3 minutes.
  4. In another bowl, beat heavy whipping cream, powdered sugar, and vanilla until stiff peaks form. Gently fold into the pudding mixture.
  5. In a serving dish or mason jars, layer one-third of the vanilla wafers, toasted coconut, and pudding mixture twice more. Reserve some toasted coconut for garnish.
  6. Chill in the refrigerator for at least 2 hours before serving.
