- 8 oz mozzarella pearls
- 1 cup chopped spinach

- 1/2 cup olive oil

- 3–4 garlic cloves (minced)
- 3/4 teaspoon Italian seasoning
- 1/2 teaspoon salt and pepper
- Balsamic glaze (optional)
Instructions
- Cook tortellini according to package instructions until al dente. Drain and rinse under cool water.
- In a large mixing bowl, combine the cooled tortellini with spinach, cherry tomatoes, mozzarella pearls, chopped basil, and minced garlic.
- Whisk together olive oil, balsamic vinegar, Italian seasoning, salt, and pepper. Pour over the salad mixture.
- Toss thoroughly to coat and chill in the refrigerator until ready to serve.
