  • 1/2 sweet onion, diced
  • 57 cloves garlic, minced
  • 1 lb ground turkey
  • 28 oz canned petite diced tomatoes
  • 16 oz canned tomato sauce
  • 1/2 cup chicken broth
  • 1 large sweet potato, cubed
  • 1 tbsp chili powder
  • 1 tsp smoked paprika
  • 1/2 tsp ground cumin
  • 1 tbsp granulated sugar
  • 1 cup frozen corn
  • Salt, to taste
  • Black pepper, to taste

Instructions

  1. Heat olive oil in a large pot over medium heat. Sauté the diced onion and minced garlic for 1–2 minutes until fragrant.
  2. Add the ground turkey; break it apart while cooking until no longer pink. Season with salt and pepper.
  3. Stir in diced tomatoes, tomato sauce, chicken broth, sweet potatoes, chili powder, smoked paprika, cumin, and sugar. Bring to a boil.
  4. Reduce heat to medium-low; simmer for about 15 minutes or until sweet potatoes are fork-tender.
  5. Add frozen corn and increase heat to medium-high. Cook until boiling again; adjust seasoning if necessary.
  6. Serve warm with desired garnishes like cilantro, cheese, and avocado.
