  • 4 salmon fillets
  • 1 tbsp butter
  • 1 tbsp olive oil
  • 2 cloves garlic
  • 34 sun-dried tomatoes (sliced)
  • ½ cup dry white wine
  • 1 cup heavy cream
  • ½ cup Parmesan cheese (grated)
  • 1 cup fresh spinach (chopped)

Instructions

  1. Pat the salmon dry and season with salt and pepper. Heat olive oil and butter in a non-stick pan over medium-high heat. Sear the salmon skin-side up for about 6-7 minutes until golden brown. Remove and set aside.
  2. In the same pan, add minced garlic and sliced sun-dried tomatoes; sauté until fragrant. Deglaze with white wine, simmering until reduced by half.
  3. Stir in heavy cream and Parmesan cheese until well combined. Add fresh spinach, allowing it to wilt slightly.
  4. Return the salmon to the pan, simmering in the sauce for another 5 minutes before serving.
