  • 1 tbsp molasses
  • 2 tsp vanilla extract
  • 3 cups quick oats
  • 1 and 1/2 cups all-purpose flour (or Bob’s Red Mill gluten-free baking flour)
  • 1 tsp baking soda
  • 1 tsp ground cinnamon
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1/4 tsp ground nutmeg
  • 1/2 cup vegan butter, softened (for frosting)
  • 26 tbsp non-dairy milk
  • 1 tsp vanilla extract (for frosting)
  • Pinch of salt (for frosting)
  • 23 cups powdered sugar, sifted

Instructions

  1. Prepare the flax egg by mixing ground flaxseed with water and letting it sit until thickened.
  2. In a mixing bowl, beat together softened vegan butter and sugars until smooth. Add the flax egg, molasses, and vanilla; mix well.
  3. In another bowl, combine oats, flour, baking soda, cinnamon, baking powder, salt, and nutmeg; gradually add to the wet mixture and stir until combined.
  4. Preheat oven to 350°F (175°C) and bake tablespoon-sized dough portions for 12–15 minutes or until golden brown. Cool completely.
  5. For frosting, beat softened vegan butter with non-dairy milk and powdered sugar until creamy.
  6. Assemble by spreading frosting on one cookie half and topping it with another.
