- 1 tbsp molasses
- 2 tsp vanilla extract
- 3 cups quick oats
- 1 and 1/2 cups all-purpose flour (or Bob’s Red Mill gluten-free baking flour)
- 1 tsp baking soda
- 1 tsp ground cinnamon
- 1/2 tsp baking powder
- 1/2 tsp salt
- 1/4 tsp ground nutmeg
- 1/2 cup vegan butter, softened (for frosting)
- 2–6 tbsp non-dairy milk
- 1 tsp vanilla extract (for frosting)
- Pinch of salt (for frosting)
- 2–3 cups powdered sugar, sifted
Instructions
- Prepare the flax egg by mixing ground flaxseed with water and letting it sit until thickened.
- In a mixing bowl, beat together softened vegan butter and sugars until smooth. Add the flax egg, molasses, and vanilla; mix well.
- In another bowl, combine oats, flour, baking soda, cinnamon, baking powder, salt, and nutmeg; gradually add to the wet mixture and stir until combined.
- Preheat oven to 350°F (175°C) and bake tablespoon-sized dough portions for 12–15 minutes or until golden brown. Cool completely.
- For frosting, beat softened vegan butter with non-dairy milk and powdered sugar until creamy.
- Assemble by spreading frosting on one cookie half and topping it with another.
