- 1/4 cup chopped parsley
- 1/4 cup chopped mint
- 3 tablespoons fresh chopped dill
- 1/4 cup extra virgin olive oil
- 1/4 cup fresh lemon juice
- 1 tablespoon honey or maple syrup
- 1/2 teaspoon kosher salt
- 1/4 teaspoon ground black pepper
Instructions
- In a large bowl, combine cooked quinoa, chickpeas, chopped cucumber, diced red onion, pistachios, crumbled feta cheese, golden raisins, kalamata olives, parsley, mint, and dill.
