  • 2 cups beef broth
  • 1 cup red wine
  • 3 carrots, sliced
  • 2 potatoes, cubed
  • 1 onion, chopped

  • 2 tbsp tomato paste
  • 1 tsp dried thyme
  • 1 bay leaf
  • Salt and pepper to taste

Instructions

  1. In a large pot over medium heat, brown the beef stew meat until seared on all sides.
  2. Add chopped onion and minced garlic; sauté until softened.
  3. Stir in tomato paste, dried thyme, and bay leaf; mix well.
  4. Pour in red wine and scrape up any browned bits from the bottom of the pot.
  5. Add beef broth along with sliced carrots and cubed potatoes; stir to combine.
  6. Bring to a boil, then reduce heat to low and let simmer for 1.5 to 2 hours until beef is tender.
  7. Season with salt and pepper to taste before serving.
