- 1 pound mild Italian sausage
- 1/2 cup diced bacon
- 1 tablespoon unsalted butter
- 1 large onion, finely chopped
- 6 cloves garlic, minced
- 3 tablespoons flour
- 6 cups low-sodium chicken broth
- 1 cube beef bouillon, crushed
- 4–5 small Russet potatoes, sliced
- 1 cup half-and-half or heavy cream
- 3 cups chopped kale (or baby spinach)
- 1/2 teaspoon salt
- 1/4 teaspoon cracked black pepper
- 1 teaspoon EACH: mustard powder, dried parsley, ground fennel
- ½ teaspoon EACH: dried oregano, dried basil
- 1/4 teaspoon red chili flakes (optional)
- Grated Parmesan
Instructions
- In a Dutch oven over medium-high heat, cook the sausage until browned. Drain excess fat and set aside.
- In the same pot, cook the bacon until crispy; drain and reserve some drippings.
- Sauté onions in reserved drippings until softened, then add garlic and cook briefly.
- Stir in flour, then pour in chicken broth and bring to a boil with seasonings.
- Add sliced potatoes and cook until fork-tender.
- Lower heat; mix in cream and greens, simmering for another two minutes.
- Serve hot with grated Parmesan on top.
