- 1 (15 lb) brisket
- 1 cup beer
- 1/4 cup apple cider vinegar
- 1/4 cup beef stock
- 5 tbsp melted butter
- 2 tbsp garlic powder
- 2 tbsp onion powder
- 2 tbsp paprika
- 2 tbsp chili powder
- 2 tbsp kosher salt
- 2 tbsp coarse ground black pepper
- 1 tbsp brown sugar
Instructions
- Preheat your Traeger grill on Smoke mode, then set to 225 degrees F.
- In a bowl, mix garlic powder, onion powder, paprika, chili powder, kosher salt, black pepper, and brown sugar.
- Rub the spice mixture generously over all sides of the brisket.
- Place the brisket fat side down on the grill and cook until an internal temperature of 160 degrees F is reached (about 3-4 hours).
- Combine beer, apple cider vinegar, beef stock, and melted butter for the baste.
- Once at temperature, double wrap the brisket in aluminum foil and pour some baste around it inside the foil packet.
- Return wrapped brisket to grill and cook until it reaches an internal temperature of 204 degrees F (another 3-4 hours).
- Let rest for at least 15 minutes before slicing against the grain.
