  • 1 (15 lb) brisket
  • 1 cup beer
  • 1/4 cup apple cider vinegar
  • 1/4 cup beef stock
  • 5 tbsp melted butter
  • 2 tbsp garlic powder
  • 2 tbsp onion powder
  • 2 tbsp paprika
  • 2 tbsp chili powder
  • 2 tbsp kosher salt
  • 2 tbsp coarse ground black pepper
  • 1 tbsp brown sugar

Instructions

  1. Preheat your Traeger grill on Smoke mode, then set to 225 degrees F.
  2. In a bowl, mix garlic powder, onion powder, paprika, chili powder, kosher salt, black pepper, and brown sugar.
  3. Rub the spice mixture generously over all sides of the brisket.
  4. Place the brisket fat side down on the grill and cook until an internal temperature of 160 degrees F is reached (about 3-4 hours).
  5. Combine beer, apple cider vinegar, beef stock, and melted butter for the baste.
  6. Once at temperature, double wrap the brisket in aluminum foil and pour some baste around it inside the foil packet.
  7. Return wrapped brisket to grill and cook until it reaches an internal temperature of 204 degrees F (another 3-4 hours).
  8. Let rest for at least 15 minutes before slicing against the grain.
