Ingredients

  • 1 large head cauliflower, chopped into florets
  • 1 (15-oz) can chickpeas, rinsed and drained
  • 3 Tbsp extra-virgin olive oil
  • 1 Tbsp curry powder
  • 2 tsp paprika
  • 1 tsp ground cumin
  • ½ cup tahini
  • Fresh herbs (cilantro and parsley)
  • Cooked rice (or grain of choice)

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Mix spices in a bowl and toss cauliflower florets with 2 Tbsp olive oil and half the spice mix; repeat with chickpeas using remaining oil and spice.
  3. Spread cauliflower on one baking sheet and chickpeas on another. Roast for 30 minutes, shaking the chickpeas halfway through.
  4. While roasting, blend tahini sauce ingredients until smooth; adjust consistency with warm water if needed.
  5. Assemble bowls by placing rice at the bottom, topped with roasted veggies and drizzled sauce.
