  • 8 ounces bowtie pasta
  • 1 1/2 cups grape tomatoes, halved
  • 1 seedless cucumber, sliced
  • 1 bell pepper, diced
  • 1/2 small red onion, diced
  • 1/2 cup Kalamata olives, drained
  • 2/3 cup feta cheese, crumbled
  • Fresh parsley, chopped
  • 1/2 cup olive oil
  • 1/4 cup water
  • 3 tablespoons red wine vinegar
  • 2 tablespoons lemon juice
  • 2 tablespoons honey
  • 1 teaspoon dijon mustard
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried dill
  • 1 teaspoon dried mint
  • 1/2 teaspoon fine sea salt
  • 1/4 teaspoon freshly ground black pepper

Instructions

  1. Cook the bowtie pasta in salted boiling water according to package instructions until al dente. Drain and rinse with cold water.
  2. In a large mixing bowl, combine the halved grape tomatoes, sliced cucumber, diced bell pepper, diced red onion, Kalamata olives, crumbled feta cheese, and chopped parsley.
  3. In a jar with a lid, mix olive oil, red wine vinegar, lemon juice, honey, dijon mustard, minced garlic, oregano, dill, mint salt and pepper. Shake well to combine.
  4. Add the cooled pasta to the vegetable mixture and pour the dressing over all ingredients. Toss gently to coat evenly.
  5. Chill before serving for enhanced flavor.
