  • 1/3 cup balsamic vinegar
  • 2 tbsp honey
  • 8 oz grape tomatoes
  • 8 oz fresh mozzarella balls
  • 2 tbsp avocado oil
  • Fresh basil, salt, and pepper

Instructions

  1. Preheat oven to 400°F.
  2. In a bowl, whisk together balsamic vinegar, honey, oil, minced garlic, Italian seasoning, salt, and pepper to create the sauce.
  3. Toss grape tomatoes, mozzarella balls, and chopped basil in a separate bowl; season with salt and pepper.
  4. Heat avocado oil in a large oven-safe skillet over medium-high heat. Season chicken breasts with salt and pepper before adding them to the pan.
  5. Sear chicken until golden brown (1-2 minutes on each side). Pour balsamic sauce over chicken and bring to a simmer while scraping any browned bits from the pan.
  6. Remove from heat; top with tomato mozzarella mixture and bake uncovered for 18-23 minutes until chicken reaches an internal temperature of 165°F.
  7. Let rest for 5 minutes before serving.
