- 1 cup diced cucumber
- 1/4 cup chopped red onion (optional)
- 1/4 cup crumbled feta cheese
- 1/4 cup fresh basil, sliced
Instructions
- Cook the orzo: Boil salted water in a large pot and cook the orzo according to package instructions until al dente. Drain and rinse under cold water.
- Prepare the dressing: In a small bowl or jar, whisk together olive oil, red wine vinegar, lemon juice, honey, garlic, Italian seasoning, salt, and pepper until well combined.
